WATERMELON, BABY ARUGULA & FETA SALAD WITH LEMON VINAIGRETTE

Serves 4

8 cups baby arugula

2 cups watermelon, cubed

¾ cup feta, crumbled

¼ cup sunflower seeds, toasted & salted

Fresh Cracked Black Pepper

Dressing

1 tsp lemon zest

2 Tbsp lemon juice

1 Tbsp rice wine vinegar

3 Tbsp extra virgin olive oil

Divide Baby Arugula among 4 serving bowls and top with watermelon cubes, crumbled feta and Sunflower Seeds. 

In a small jar with a tight fitting lid, shake together dressing ingredients to blend well.  Drizzle over the salads and top each with fresh cracked black pepper.
